Ingredients
  

  • 1 cup vegan butter
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¼ cup coconut milk or oat milk
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup dairy-free dark chocolate
  • ½ cup chopped nuts optional, like almonds or pecans

Instructions
 

Prepare Your Baking Dish

  • Line an 8×8-inch or 9×9-inch baking dish with parchment paper so it’s easy to lift out later.
  • If you’re adding nuts, sprinkle them evenly over the bottom of the dish.

Cook the Toffee Mixture

  • In a medium-sized saucepan, combine:
  • 1 cup vegan butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 2 tablespoons corn syrup (or maple syrup)
  • Place the pan over medium heat, stirring occasionally until the butter melts and everything combines smoothly.
  • Attach a candy thermometer to the side of the pan. Continue cooking until the mixture reaches 300°F (hard crack stage).

Add Vanilla and Salt

  • Once the toffee reaches 300°F, immediately remove it from the heat.
  • Mix in 1 teaspoon of vanilla extract and a pinch of salt. Be careful it will bubble up

Pour and Spread the Toffee

  • Pour the hot toffee mixture into the baking dish you’ve prepared.
  • Quickly spread it evenly with a spatula.
  • If adding chocolate, sprinkle the vegan chocolate chips over the hot toffee. Let them sit for 2-3 minutes, then spread the melted chocolate evenly over the surface.
  • Let the toffee cool completely at room temperature. This usually takes about 1-2 hours.
  • Once hardened, lift the toffee out of the dish using the parchment paper. Break it into bite-sized pieces.

Notes

  1. Don’t Rush the Temperature: Patience is key. Let the toffee reach 300°F for the right texture. Under-cooking leads to chewy toffee.
  2. Use a Candy Thermometer: Guessing the temperature can result in inconsistency. A candy thermometer ensures accuracy.
  3. Stir Carefully: Avoid stirring too vigorously. Gentle stirring helps prevent sugar crystallization.
  4. Watch for Color: The mixture should turn a deep amber color. If it’s too light, the flavor won’t be fully developed.
  5. Work Quickly: Once the toffee is ready, pour it out immediately to prevent it from hardening in the pan.
