Ingredients
  

  • 6 cups puffed rice cereal gluten-free if needed
  • 4 cups vegan marshmallows
  • 3 tbsp vegan butter or coconut oil
  • 1 tsp vanilla extract optional
  • 2 tbsp brown rice syrup optional, for extra sweetness

Instructions
 

  • In a spacious saucepan, gently melt the vegan butter or coconut oil over low heat.
  • Once melted, add the vegan marshmallows and stir continuously until fully melted and smooth.
  • Take the pan off the heat and swiftly mix in the puffed rice cereal.
  • Ensure that the cereal is fully coated with the marshmallow mixture, with no dry spots remaining.
  • Lightly grease a 9x13-inch pan or line it with parchment paper for easy removal. Transfer the mixture into the pan and carefully press it down using a greased spatula or your hands.
  • Let the mixture sit at room temperature and cool for around 30 minutes. Once fully set, slice into 12 squares and serve.

Notes

  • For a nutty flavor, you can add 2-3 tablespoons of peanut butter to the melted marshmallow mixture.
  • Drizzle melted dairy-free chocolate on top for an extra indulgent treat.
  • Keep any leftovers in an airtight container at room temperature for up to 3 days, or freeze them for extended storage.
