Ingredients
  

  • 1 cup Medjool dates pitted
  • ½ cup almond butter or peanut butter
  • 2 teaspoons matcha powder ceremonial grade preferred
  • ½ cup rolled oats
  • 2 tablespoons chia seeds
  • ¼ cup cacao nibs
  • ½ cup dark chocolate dairy-free, 70% or higher
  • 1 tablespoon coconut oil for chocolate topping

Instructions
 

  • In a food processor, blend Medjool dates, almond butter, and matcha powder until smooth and sticky.
  • Stir in rolled oats, chia seeds, and cacao nibs until well combined.
  • Line an 8x8-inch baking dish with parchment paper.
  • Firmly press the mixture into the dish, making sure it's spread out nice and even.
  • Place it in the fridge for at least 30 minutes to let the mixture firm up.
  • Melt dark chocolate and coconut oil using a double boiler or microwave.
  • Spread the melted chocolate over the chilled base.
  • Chill for another 30 minutes until the chocolate sets. Then, lift out the bars, slice them into squares, and enjoy every bite!

Notes
