Make the Caramel Sauce:
Combine coconut cream, coconut sugar (or maple syrup), vegan butter, and a pinch of salt in a medium saucepan over medium heat.
Stir continuously as the mixture heats, bubbles, and thickens. This should take about 8-10 minutes.
Use a candy thermometer to ensure the caramel reaches 240°F (soft-ball stage), or test its thickness by letting a small drop cool slightly on a spoon.
Once thickened, remove the pan from heat and stir in vanilla extract (if using).
Dip the Apples:
Dip each apple into the warm caramel, twisting it to coat evenly. Allow any excess caramel to drip off.
Roll the caramel-coated apples in your toppings or drizzle with melted vegan chocolate.
Place the apples on a parchment-lined tray to set.
Allow the apples to cool and the caramel to firm up at room temperature for about 30 minutes. For faster results, place them in the fridge for 15-20 minutes.
- Make Ahead: These caramel apples can be stored in the fridge for up to 5 days. AllowFor the best texture, let them to reach room temperature before servingto achieve the ideal.
- Caramel Consistency Tip: If the caramel becomes too thick to work with, gently reheat it on low heat.
- Wax-Free Apples: Be sure to remove the wax coating on store-bought apples to help the caramel stick properly.
