Ingredients
  

For the Caramel Sauce:

  • 1 cup coconut cream thick part from canned coconut milk
  • ½ cup coconut sugar or maple syrup
  • 2 tablespoons vegan butter
  • 1 teaspoon vanilla extract optional
  • A pinch of salt

For the Apples:

  • 4-6 medium-sized apples Granny Smith, Fuji, or Gala recommended
  • Wooden skewers or popsicle sticks

Toppings optional:

  • Chopped nuts e.g., pecans, almonds, or peanuts
  • Shredded coconut
  • Vegan chocolate chips melted for drizzling
  • Crushed pretzels
  • Vegan sprinkles

Instructions
 

Prepare the Apples:

  • Wash the apples in warm water to remove any wax coating. Dry thoroughly.
  • Insert a skewer or popsicle stick into the top of each apple.

Make the Caramel Sauce:

  • Combine coconut cream, coconut sugar (or maple syrup), vegan butter, and a pinch of salt in a medium saucepan over medium heat.
  • Stir continuously as the mixture heats, bubbles, and thickens. This should take about 8-10 minutes.
  • Use a candy thermometer to ensure the caramel reaches 240°F (soft-ball stage), or test its thickness by letting a small drop cool slightly on a spoon.
  • Once thickened, remove the pan from heat and stir in vanilla extract (if using).

Dip the Apples:

  • Dip each apple into the warm caramel, twisting it to coat evenly. Allow any excess caramel to drip off.
  • Roll the caramel-coated apples in your toppings or drizzle with melted vegan chocolate.
  • Place the apples on a parchment-lined tray to set.
  • Allow the apples to cool and the caramel to firm up at room temperature for about 30 minutes. For faster results, place them in the fridge for 15-20 minutes.
