For the Seitan Filling:
- 2 cups seitan sliced or crumbled
- 1 tablespoon olive oil
- 2 teaspoons taco seasoning chili powder, cumin, paprika, garlic powder
- 1 bell pepper sliced
- 1 small onion sliced
For the Tacos:
- 8 small corn or flour tortillas
- 1 avocado sliced or mashed into guacamole
- 1 cup shredded lettuce or cabbage
- 1 cup salsa or pico de gallo
- 1/2 cup vegan sour cream or cheese optional
- Lime wedges and fresh cilantro for garnish
Preheat a skillet over medium heat, then drizzle in some olive oil. Sauté the seitan, taco seasoning, bell pepper, and onion for 5-7 minutes, stirring occasionally, until the vegetables are tender and the seitan is heated through and coated with the spices.
While the filling cooks, warm the tortillas using one of the following methods:
Heat them gently in a dry skillet set to medium.
Wrap them in a slightly damp towel and microwave for 20-30 seconds until heated through.
Place the seitan filling onto each tortilla. Top with your choice of ingredients, such as avocado, salsa, shredded lettuce, and vegan sour cream. Top with a splash of fresh lime juice and a sprinkle of chopped cilantro.
