Ingredients
  

  • 1 cup quinoa
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 1/2 red onion
  • 1 bell pepper any color
  • 1/2 cup Kalamata olives
  • 1/2 cup vegan feta cheese or traditional feta
  • 1/4 cup fresh parsley
  • 2 tablespoons fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic
  • Salt and pepper to taste

Instructions
 

  • Rinse the quinoa thoroughly under cold water to eliminate any bitterness. Cook in water until fluffy, then let it cool completely.
  • Chop the cherry tomatoes, cucumber, red onion, and bell pepper into bite-sized pieces. Thinly slice the olives and crumble the feta cheese into small pieces.
  • Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl. Adjust seasoning to taste.
  • In a large mixing bowl, toss the cooled quinoa with the vegetables, olives, and fresh herbs. Drizzle the dressing over the salad and toss until every ingredient is evenly coated.
  • Serve immediately or chill in the refrigerator before serving for a refreshing flavor.
