- 1 medium head cauliflower chopped into bite-sized florets
- 2 cups mushrooms sliced (button, cremini, or shiitake)
- 4 garlic cloves minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1/2 teaspoon salt adjust to taste
- 1/4 teaspoon black pepper
- 1/4 teaspoon chili flakes optional, for heat
- 2 tablespoons nutritional yeast optional, for cheesy flavor
Wash and chop the cauliflower into small florets. Slice the mushrooms evenly and mince the garlic cloves.
Warm some olive oil in a big skillet over medium heat. Toss in the minced garlic and cook for around 30 seconds until it smells amazing. Add mushrooms and cook for 5-7 minutes until they release moisture and brown.
Toss the cauliflower florets into the skillet with the mushrooms. Stir well to coat them with the garlicky mixture.
Place a lid on the skillet and lower the heat to medium-low. Let it cook for 8-10 minutes, stirring it now and then until the cauliflower is tender with a slight crunch.
Remove the lid and season the dish with salt, pepper, and chilli flakes (if using). Drizzle lemon juice over the vegetables and stir well.
Sprinkle nutritional yeast (optional) and fresh parsley over the top before serving. Enjoy it hot, either as a main dish or a tasty side.
