- 1 can 15 oz cooked chickpeas, drained and rinsed
- 1/2 cup cocoa powder unsweetened
- 1/2 cup maple syrup or sweetener of your choice
- 1/4 cup peanut butter or other nut butter
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup dairy-free milk almond, oat, or soy
- 1/4 cup vegan chocolate chips optional
- 1/4 cup chopped walnuts or pecans optional
Drain and rinse the chickpeas thoroughly. Optionally, remove the skins for a smoother texture.
In a food processor or blender, combine the chickpeas, cocoa powder, maple syrup, peanut butter, vanilla extract, baking powder, and salt. Blend until smooth. Add dairy-free milk as needed to achieve a thick batter consistency.
If using, fold in the vegan chocolate chips and chopped nuts for extra texture.
Preheat your oven to 350°F (175°C). Line an 8x8-inch brownie pan with parchment paper or lightly grease it.
Bake for 20-25 minutes, or until the edges are set and the center is slightly soft (they'll firm up as they cool).
